Irish Coffee With Bailey's Spiked Whipped Cream For St. Patrick's Day!

Oh St. Patrick’s Day, how very fond I am of the holiday that often ignites a little Irish spark in me. And by “spark,” I mean a taste and desire for an exorbitant amount of booze. Because on St. Patrick’s Day, thou shall eat...and drink like the Irish, right? And while my Western European heritage had absolutely no trace of Irish, I still very much like the excuse to partake in excess.

I guess some things will never change. Because while I’m routinely extremely healthy in terms of diet and exercise, I also thoroughly enjoy a good ole boozing session every now and then. Even if it definitely doesn't support my “all things in moderation” attitude. Lately, Chris hasn’t been partaking so much though. He’s on a new kick, which has meant far less alcohol. I don’t blame him. Hangovers suck. And productivity - especially on a Sunday, does feel really freaking good.

But you wanna know what also feels really good? The buzz I get off an Irish Coffee...or three. And maybe a “Baby Guinness” shot and a shot of straight Jameson, too. Because why the hell not.

So today, I bring you my favorite Irish cocktail that I really only concoct twice a year - once around Christmas and then again on St. Paddy’s Day. Irish coffee - it’s a mix of two of my favorite things and it’s also so, very good. I make mine with both Jameson Irish Whiskey and Bailey’s Irish Cream too, because again, why the hell not? I also top it off with Bailey’s spiked whipped cream because I like to be fancy whenever possible. And homemade whipped cream is like, really easy.

You wanna know what I also like about this holiday? Wearing green. It’s my absolute favorite color in the world and is just so versatile too. This hunter green jumpsuit is as comfortable as jumpsuits come too. With cinched in legs, it’s nice and flowy but also perfect for wedges and heels.

The Recipe:

Irish Coffee With Spiked Whipped Cream

Ingredients:

8 ounces hot and freshly brewed coffee

1 ounce Jameson Irish Whiskey

1 ounce Bailey’s Irish Cream

1 teaspoon pure cane sugar
 

For the spiked whipped cream:

1/2 cup heavy whipping cream

1 tablespoon powdered sugar

1 teaspoon Bailey’s Irish Cream

1/4 teaspoon Vanilla extract

In a mixing bowl, combine whipping cream, sugar, Irish cream, and vanilla extract. Using a hand-held mixer on high, mix cream until pillowy peaks form at the top. Set aside.

Combine coffee, whiskey, Irish cream, and sugar in a glass mug. Stir and top with spiked whipped cream

Enjoy!

*Yields 1 Irish Coffee (with leftover whipped cream)
